Last Sunday I had a so called carb day (low fat, high carb & protein) so I made a delicious low fat protein gingerbread cheesecake with banana slices, raisins and apple pieces without any added sugar. Here's the recipe and how I made it.

Ingredients:
360g Philadelphia lightest
2 eggs
40g raisins
40g One Casein Cookie Dough
370g banana
130g apple
40g xylitol
3g gingerbread spice
30g sugar free maple syrup

Preparation:
Preheat the oven gas mark 5 (190°C). Mix the soft cheese, eggs, raisins, casein, xylitol, gingerbread spice and sugar free maple syrup in a large bowl until smooth, then stir in the apple pieces. Cover the bottom of a medium sized springform pan with banana slices. Pour the mix in the pan and garnish with the rest of the banana slices on top. Put some extra gingerbread spice on top then bake on the lower shelf for 40 minutes. Let it cool down, then put it in the fridge for two hours or more before serving.

After a great leg session it was time to break the fast and have Martin's special low fat, sweet potato fajitas. I first made these a couple of weeks ago and they were delicious! Altered it slightly this time and documented each ingredient. I recently found low fat tortillas which follow my belief that you should mix fat and carbs. I prepared a sweet potato cinnamon infused mash for the first layer, and then added Laughing Cow extra light soft cheese. On top of that I added my fajita mix (chicken, peppers and onions) then I finish it off with a layer of hot salsa to spice things up a little.

Most days I'm on a low carb diet, but once or twice a week I have a so called "Carb Day" or refeed day (usually after a heavy leg session) where I exchange my fats for carbohydrates. Where I get my carbs from varies a lot and I don't care much about low vs. high GI. I basically treat myself to something I stay away from during the rest of the week. One of my favorites that I have quite often is crumpets. They are very low in fat and quite low in carbs as well if you compare with other types of bread. I make a fluff using Fitnessguru's One Egg and put the crumpets in the toaster. The great thing about egg protein fluff is that it stays fluffy even on hot food. Toasted crumpets taste similar to waffles and with fluff on top it's truly delicious!
